Sweet Saturday: Easy Vegan Coconut-Lemon Bundt Cake

Just one of many amazing recipes from Veganomicon: The Ultimate Vegan Cookbook, this Coconut-Lemon Bundt cake will not disappoint! Check out the recipe below, and forgive me for the lousy camera-phone photo; my real camera is currently out of commission. 

You’ll need: 

1 2/3 cups sugar

2/3 cup canola oil

1 (14 oz) can coconut milk

1/4 cup rice or soy milk (I use almond) 

1/4 cup lemon juice

3 TBLS grated lemon zest

2 tsp pure vanilla extract

3 cups all-purpose flour (I use whole wheat pastry flour)

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1 1/2 cups shredded unsweetened coconut

Powdered sugar for sprinkling

Instructions: 

1. Preheat the oven to 350 and lightly grease your bundt pan.

2. Combine sugar, oil, coconut milk, rice or soy milk, lemon juice, lemon zest, and vanilla in a large bowl. 

3. In a separate bowl, combine flour, baking powder, baking soda, and salt. 

4. Add the dry to the wet in batches, mixing well. 

5. Fold in the coconut.

6. Pour batter into pan, and bake for one hour. 

7. Let cool for ten minutes, and then gently flip over to release cake from pan. 

8. After the cake has cooled, sprinkle with powdered sugar.

Sweet Saturday: Delicious Homemade Sangria

I hope you are having as sweet a Saturday as I am! I’m currently basking in the rays of south Louisiana sunshine and sweet family traditions. 

Speaking of family traditions, I think my sister found a new one. Over Father’s Day weekend, we made this Sangria recipe that she had found and was wanting to try. It was delicious! It was a hit! It was so good that I decided to make it again for a friend’s birthday party this week.

Sweet Saturday: Daisy Happy

Most of you can probably guess that I bake A LOT. But what you might not know is that I bake with a purpose. Today I got to make chocolate cupcakes for someone’s baby shower. I knew the theme was pink and orange Gerber daisies, so earlier this week, I spent the afternoon making some out of royal icing. I needed a few days for them to harden so that I could place them easily on the cupcakes.

Ooh, pretty! Gerber daisies are SO summer-timy aren’t they? I decided to add these cute picket fence liners around the cupcakes because along with the chocolate, I felt like I was looking at a cute lil’ garden.

Sweet Saturday: Miniature Sorbet Pastries

Today is the first Saturday in MONTHS that I haven’t either: a) been out of town or b) had company staying at our house. Seriously. For real. As in, March 26th was the last free Saturday I can remember having (and even then, I was slaving away on my research). So, as you can imagine, this has been a VERY sweet Saturday for me. 

Today, while in the grocery store, I passed by some mango sorbet. Doesn’t mango sorbet sound just perfect for a Memorial-Day-weekend-summer-time-treat? Well, it got me thinking back to a few years ago, when Fran made this pie filled with lemon sorbet. If I remember correctly, she topped it with a mix of berries and honey. And it was SO tasty. So tasty, that I decided to do a re-mix version of Fran’s pie.

I didn’t want to make a WHOLE pie since it’s just the two of us, so I decided to use miniature pastry cups instead. I baked them, filled them with the sorbet, and put them in the freezer to chill. Then, I topped them with strawberries (strawberries and mangos = best fruit combo EVER) and a blueberry (just for more frills), and I drizzled some honey on them, too. 

What a perfect summer treat! You can see from the picture that I didn’t chill the sorbet quite long enough on this one. The rest of the batch will be even better.

Sweet Saturday: Funfetti Frills

Well, I was gonna make a lovely cake to celebrate my graduating, but then I realized, I didn’t feel like it! Instead, while still keeping it simple, I decided to frill things up with a funfetti box mix and some homemade cream cheese icing.

Sweet Sunday: Cupcakes Galore!

Happy Mother’s Day to all the great mama’s out there! How fitting that my sweet friend, A, is having a BABY BOY! To celebrate, naturally, I made lots and lots of sweets for her shower this weekend. I had a vision of a tower of cupcakes topped off with a miniature cake displaying baby’s monogram in all it’s glory.

Pineapple upside down cupcakes. Need I say more?

White cake with chocolate frosting. I had the patch made through Pinwheel Kids in Waco. I thought it would make a great cake topper, and so it did! Plus, it made for an extra gift for mom-to-be. The frosting washed off nicely, and it can be stitched onto a onesie, burp-cloth, blanket, you name it!

The finished product. A delight! Magnificent! Happiness and frills and glee! And LOTS of leftover cupcakes.

Sweet Saturday: Birthday Cake Extravaganza

Sunny Saturdays are always sweet, especially when they involve frilling birthday cakes. A friend of mine needed a bold and bright cake for the monster-themed 2nd birthday of one adorably cute tot. Bold you want? Bold I can deliver! It was tons of fun being playful and creative with this colorful cake.

Sweet Saturday

This Saturday is filled with sweetness! My sweet friend had a baby shower for her twin baby girls, and I got to bake the cake. And I’m currently on my way home to Louisiana, where I’ll be presenting my absolutely DARLING niece with a cake for her second birthday. Thanks so much to my dear friend Ashley for helping me with these two cakes! Frilling! 

But first, check out the cupcake recipe I tried this week: 

Chocolate Hazelnut Cupcakes. The recipe called for hardly any flour, so the consistency was very interesting. Kind of gooey/brownie like. I’m not sure if this is an everyone-will-LOVE-it kind of a recipe, but I thought they were delightful! 

This is a white cake with strawberry filling and vanilla butter cream icing. The bow was made using fondant. I was going to go with a jungle theme originally (that’s the nursery theme for the twins), but then I decided that a really PRETTY cake would be best. LOVE it!

This is a traditional yellow cake with chocolate butter cream icing. I made the Elmo cake topper using a color flow icing. Then, I cracked it when I pressed it down too hard on the cake. Boo! Oh well, still frilling to me!

Sweet Saturday: Cheesecake Bakes

Hello all! I don’t know about you, but I had SUCH a sweet Saturday. I got to do some of the things I love most: spend time with sweet, sweet friends, shop and lunch at Whole Foods, work out in the yard, and lounge around watching girly movies. What made your Saturday Sweet?

I wanted to share the latest of my baking escapades thanks to 500 Cupcakes: Cheesecake Bakes. These turned out delicious! Perfect for a spring time treat.

Next week is going to be extra sweet for me. I’m trying a new cupcake recipe AND making two cakes. Stay tuned!
